Vatapa
3 slices rice bread or almond bread (available at health food stores) 1/4 cup coconut milk 1/2 cup chopped onion 1 clove garlic, minced 1/2 teaspoon paprika 1/2 teaspoon chopped cilantro 1 1/8 teaspoon cayenne pepper 1/2 teaspoon sea salt 1/2 teaspoon minced fresh ginger 1/2 pound dulse seaweed filtered water 1/3 cup cashews, finely chopped peanut oil for greasing pan 1. trim crust from bread and discard. Break bread into pieces in a bowl 2. pour coconut milk over the bread and allow to soften 3. mash the softened bread mixture with a fork until fine. Add onion, garlic, paprika, cayenne, salt, and ginger, mix well. 4. soak seaweed in enough water to cover, until fluffy looking and drain. Marinate with other ingredients for 20 to 30 minutes 5. Preheat oven to 325 degrees F. Oil 9 inch square baking pan. Add Mixture, sprinkle with cashews on to and bake for 25 minutes. 6. serve warm. Serves 2.
