Sea Veggies and Cabbage

2 tablespoons extra virgin olive oil
1 small red onion, diced
4 cloves garlic, chopped
1 ounce kombu or arame seaweed ,soaked in water for about 20 minutes to reconstitute
1/4 teaspoon date sugar or 2 tablespoons maple syrup or honey
1/4 pound red cabbage, shredded
1/2 pound green cabbage, shredded
1 granny smith apple, diced
1/4 cup white wine (chardonnay is ideal)
1/4 cup filtered water
sea salt to taste
1 tablespoon white wine vinegar
1/2 pound whole grain linguine, prepared according to package instructions.
1. heat oil in large pan over medium heat. Saute onion, garlic, and seaweed until onions are golden
2. stir in sugar and add cabbage and apples. Mix well, cover, and cook over low heat for 20 minutes
3. add wine and water. Cover and cook for about 20 minutes more. Season with salt and vinegar
4. serve over whole grain linguine. Serves 2.
