Cucumber Queen
1 cucumber 1 small onion, cut into thin slices, about 1/4 pinch of salt 1 teaspoon rice wine vinegar 1/2 teaspoon honey 1 teaspoon fresh dill, chopped finely pinch of pepper 1 tablespoon minced green bell pepper 1 tablespoon alfalfa sprouts dash of paprika 1. Slice the cucumber in half lengthwise into thin strips. In a bowl, combine it with the onion. Stir in remaining ingredients except sprouts and paprika. 2. Serve on toasted bread triangles or use as a filling for a sandwich. Top with alfalfa sprouts and dash of paprika. Yields 2 servings.
