Rice Pilaf
1/4 cup vegetable oil 2 shallots, minced 3 tablespoons minced ginger 3 garlic cloves, mincedsalt 6 cups boiling water In a saucepan over medium heat, add the oil and saute the shallots, ginger, and garlic. Add the rice and stir with a wooden spoon for about 2 minutes to coat all the grains with the flavor from the pan. Season to taste with salt. Add the boiling water, cover, reduce the heat to low, and cook for 15 minutes. Turn the heat off and let it rest, covered, for about 10 minutes before serving. Makes 12 servings.
