Coconut Date Paradise
3 carrots (1/2 cup pulp) 3 cups whole pitted dates 1 cup sweetened flaked coconut 1 1/2 cups unsalted pecans, soaked and drained 1. Juice carrots 2. In a blender or food processor, combine 1/2 cup carrot pulp with remaining ingredients. Blend until smooth. 3. Press the mixture into a slightly greased 9 inch pie plate or a 9 by 12 inch baking dish 4. Bake in a 350 degree f. oven for 15 minutes. Serves 3-4
