Cherry-Berry Pudding

1 lemon (2 tablespoons juice)
3 cups pitted frozen cherries or any other frozen berries
1 1/2 cups silken tofu
1 tablespoon protein powder
1/4 cup pure maple syrup
1. Juice lemon
2. In a blender or food processor, combine 2 tablespoons lemon juice, cherries, tofu, protein powder, and maple syrup. Blend for 2 minutes, or until smooth
3. Serve chilled. Serves 2-3
