Red Snapper

Snapper 1-1/2 lb red snapper fillets 1/4 cup chopped fresh coriander
(cilantro) grated lime rind from 1 medium lime 1/4 cup fresh lime juice 2
tbsp olive oil 2 cloves garlic, minced 1 tsp minced canned or fresh green chilies
(optional) 1/4 tsp salt and pepper 1. Place fillets in 8 inch square baking dish.
Whisk together coriander, lime rind and juice, oil, garlic, chilies, salt and pepper; pour
over fillets. Cover and marinate for 30 minutes 2. Bake in 425 degree F oven for 15
minutes or until fish flakes easily when tested with fork. Makes 4 servings.
