Pumpkin Dessert
Pumpkin Dessert 2 cups pumpkin, peeled, seeded, and cut into 1/2 inch cubes 2 cups sugar 10 whole cloves 5 cinnamon sticks, broken into pieces 2 teaspoons vanilla extract In a saucepan over low heat, add the pumpkin cubes and sprinkle the sugar on top. Cover and cook for about 1 hour. Do not Stir to avoid breaking up the chunks Add the cloves, cinnamon, and vanilla to the pan (again, do not stir) and cook, covered, for another hour. Let it rest, covered, for 30 minutes. Gently transfer to a serving bowl with the cinnamon and cloves, and only half the syrup (discard the other half). Refrigerate for at least 30 minutes, covered with plastic wrap. Serve Cold. Makes 8 servings.
